Fruit pizza

Ingredients

Crust

  • 310 g all purpose flour
  • 250 g Butter, diced
  • 80 g brown sugar
  • 50 g sugar

Filling

  • 95 g sugar
  • 375 g cream cheese, cubed
  • 5 g vanilla extract

Topping

  • Variety of seasonal fruit

Glaze (Optional)

  • pineapple juice
  • 20 g cornflour

Recipe's preparation

    Crust
  1. Pre-heat oven 180 degrees. 

  2. Add 50g sugar (not brown sugar) mill sp10/10secs. Set aside.

  3. Beat butter sp4/10secs.  Scrape down the sides of bowl.

  4. Add milled sugar and brown sugar.  Beat sp4/10secs.  Scrape down the sides of bowl. Repeat.

  5. Add flour and mix sp4/30secs.  Scrape down sides. Repeat if the dough hasn't come together. 

  6. Push and press crust dough into a pizza pan making sure it is even and flat.  Use your MC to flatten out dough if you need to.

  7. Place into oven and bake for 10-15mins or until golden.  Allow to cool before adding cream cheese.

  8. Clean and dry bowl.

  9. Cheese Filling
  10. Add sugar to bowland mill sp10/5secs.

  11. Add cream cheese and vanilla. mix sp10/sp4. Scrape down sides and repeat until it had come togthers.

  12. Spread cheese filling out onto cooled crust.

  13. Topping
  14. Slice a variety of fruits up.  Starting from the outside of the arrange fruit on to pizza.  Refer to the picture.

  15. Glaze
  16. Put pineapple juice from a tin into a small pot.

  17. In a small dish stir together cornflour and water.

  18. Add cornflour mixture to pinapple juice and stir for 1min.

  19. With basting brush, brush glaze onto arranged fruit.

Tip

Fruit you could use are:

Blueberries, strawberries,cherries, mangoes, kiwi fruit lychees, peaches, nectarines, pineapple, grapes, mandarin, bananas. 

As I usually make this at Christmas time I usually use a lot of stone fruits.

I don't usually so a galze unless I am using fruit that goes brown. I haven't worked out the times for the glaze done in the thermomix. But Im sure you can do it.

This also tastes best after resting for a day.
