Ingredients

Base

  • 380 g plain flour
  • 2 tsp ground ginger
  • 1 tsp baking powder
  • 220 g white sugar
  • 250 g Butter, chopped
  • 1 egg

Icing

  • 240 g icing sugar
  • 150 g Butter, chopped
  • 90 g golden syrup
  • 1.5 tbsp ground ginger

Recipe's preparation

    Base
  1. Preheat oven to 180 degrees C and line a 20x30cm slice tin with baking paper.

    Combine flour, baking powder, ground ginger and sugar in TM bowl and mix 5 seconds speed 5

  2. Add butter and combine using Turbo 3 x 1second pulses

  3. Add egg and mix 5 seconds speed 5 then knead 1.5 minutes

  4. Tip mixture into prepared baking tin and press evenly into pan.  Bake 40 minutes at 180 degrees C then lift out and cool ~10 minutes before covering with icing.

  5. Icing
  6. Combine butter, syrup and ginger for 3 minutes at 60 degrees speed 2

  7. Add in icing sugar and mix 20 seconds speed 5

  8. Spread over slice and leave to set in the refrigerator.  Cut into pieces once set
