Gluten Free Almond and Lemon Cake

  • 55 grams almonds
  • 200 grams castor sugar
  • 200 grams soft butter
  • 200 grams gluten free flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon Bi-carb soda
  • 5 eggs
  • 100 grams ricotta cheese
  • rind 1 lemon

  • 360 grams icing sugar
  • 200 grams unsalted butter

Recipe's preparation

    Oven and cake pan
  1. 1. Pre-heat oven to 180°C

    2. Grease and line a 22cm cake pan
  2. Cake
  3. 1. Place almonds, sugar and lemon rind into thermomix bowl and mill for 3-4 seconds speed 9-10.

    2. Add rest of ingredients and mix for 30 seconds speed 4-5.

    3. Scrape down sides of bowl.

    4. Mix again for 10 seconds speed 4-5

    5. Pour batter into prepared tin and bake for for 45 minutes.

    6. Leave to cool in pan for 10-15 minutes before turning out onto cake cooler.
  4. Lemon Frosting
  5. 1. Place all frosting ingredients into thermomix bowl and mix for 60 seconds speed 5-6 or until smooth.

Tip

I have made cake using blanched and raw almonds. Smoother texture with blanched almonds and less almondy taste. The lemon frosting does make a big batch of frosting so you may want to half the mixture. You could slice cake in half and ice with lemon frosting in middle as well if you like. One of the nicest gluten free cakes I have tried. Found recipe in a magazine at the doctors and quickly wrote down ingredients before appointment - so not sure who takes credit for recipe!

    Great flavour and very tasty. I had no ricotta cheese and used Greek yogurt. Instead of icing I made a syrup out of a lemon and icing sugar and poured it over the cake whilst hot.
