Gluten Free Banana and Strawberry Muffins

  • 220 grams raw almonds
  • 3 eggs
  • 50 grams coconut oil
  • 50 grams Raw Honey
  • 2 bananas
  • 150 grams strawberries
  • 1 teaspoon baking soda (bicarb)
  • 1 teaspoon cinnamon (ground)
  • 1 teaspoon vanilla essence

  • 220 grams raw almonds
  • 3 --- eggs
  • 50 grams coconut oil
  • 50 grams Raw Honey
  • 2 --- bananas
  • 150 grams strawberries
  • 1 teaspoon Baki

Recipe's preparation

    Gluten Free Banana and Strawberry Muffins
  1. 1. Preheat oven to 180 degrees Celsius

     

     

    2. Place raw almonds into TM bowl and mill for Speed 6 for 10 seconds.

     

    3. Add eggs, coconut oil, raw honey, chopped bananas, strawberries, baking soda, cinnamon and vanilla. Mix on Speed 5 for 10-15 seconds until all ingredients are combined.

     


    4. divide mixture evenly into approx 8 muffin tins and bake for approx 30 minutes (or until cooked through).

     

     

    5. Cool on wire rack until ready to serve

Tip

Can be served as is or topped with yoghert, ricotta, berries, fruit etc.

    Made these tonight. Very easy, light and moist. I didn't use coconut oil, used grape seed oil instead and just stirred in bananas and strawberries at the end.

    Really nice flavour, and so quick and easy. I just found mine to be a bit eggy in texture and flavour. But overall, a really nice gluten free muffin

    Delicioussss.  I used these as the base/guide - I had to sub a few ingredients. I only had 1 banana so added 1 extra egg and only had 160g of almond meal. I blended strawberries for 5 sec at the very end.  I topped with homemade strawberry jam - purely devine. Next time I might chop strawberries and stir in for chunkier texture.

    You can sub with any type of 'fat' you like, maybe try macadamia oil, or you can use butter if you want........ totally up to you.
