Gluten Free Sugar Free Banana Bread

Ingredients

12 portion(s)

Batter

  • 4 very ripe bananas
  • 50 gram coconut oil
  • 4 eggs
  • 1 teaspoons Vanilla Bean Paste
  • 1.5 teaspoon cinnamon
  • 60 grams Coconut Flour
  • 1 teaspoon TMX baking powder
  • 1 pinch salt
  • 40 grams sultanas, optional
  • 40 grams choc chunks, optional (dark, milk)

Recipe's preparation

    Making the batter
  1. Preheat oven to 170 degrees and grease a bread pan with coconut oil.

    Add all ingredients (except sultanas and choc chunks) into your Thermomix bowl. Mix on speed 5 for 10 seconds or until combined.

     Add optional extras and combine  Counter-clockwise operation Speed 3 for 5 seconds.

    Place into bread tin and bake for 45 mins or until top is golden and skewer comes out clean.

    Add some honey or maple syrup to the batter if you do not have very ripe bananas.

    It's in the oven and judging by the taste of the mixture, it will be delicious! Thanks Jess for converting and posting this recipe.

    Just a tip if you use frozen pieces of banana as I did, ensure they're brought to room temp first so that the coconut oil doesn't solidify on the cold metal. My banana pieces (ice cube size) were still semi frozen when I put them into the bowl and some of the coconut oil solidified and stuck to the blade. I warmed the whole mixture up to 40 deg to try get it off but it didn't come off, so my banana bread has less oil in it than it should.

    Have just made this and am most impressed. Just be careful, though, most chocolates have gluten in them. Use Loving Earth Coconut Mylk Chcoolate/Dark Chocolate. Yum!
