Gluten Free Weetbix Slice

Ingredients

20 piece(s)

Weetbix

  • 85 grams Gluten free Weetbix
  • 125 grams Butter
  • 180 grams brown sugar
  • 30 grams Shredded coconut
  • 20 grams cocoa
  • 140 grams Gluten Free SR Flour
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 140 grams raw sugar
  • 25 grams Milk
  • 10 grams cocoa
  • 5 grams Butter

Recipe's preparation

    Base
  1. 1.  Preheat oven 180 degrees or 160 fan forced

    2.  Line 20cm square tin with baking paper

    3.  Place GF Weetbix in TMX bowl. Process 5 Secs/Speed 5. Once done place in a seperate bowl for later.

    4.  Add Butter and melt 60 degrees/50 secs/Speed 4

    5.  Add GF Weetbix, Brown Sugar, Shredded Coconut, Cocoa, GF SR. Flour, Egg and Vanilla Extract and mix Counter-clockwise operation/20 secs/Speed 4.

    6.  Once mixture combined press into lined tin. Bake in oven for 20 mins.

    While mixture is baking prepare icing.

    Clean and dry TMX bowl thoroughly.

    1.  Add Raw Sugar to TMX and mill 15 Secs/Speed 9.

    2.  Scrape down bowl and add Milk, Cocoa and Butter. Mix 8 secs/Speed 5. Scrape down bowl and mix again 3 Secs/Speed 5. 

    3.  Pour icing over baked hot slice. Leave to cool to room temp. Or place in fridge.

    What a great discovery! Just love this slice! Really delicious and easy to adapt for dairy free as well. I substituted equal weight Nuttelex "Buttery" and coconut milk (not tinned) for icing. Perfect! Love the use of brown and raw sugar, and used cacao as well for extra healthy touch. The icing cracked - but who cares!

    So delighted to find a treat that my gluten and dairy intolerant husband loved so much that he didn't feel he was missing out on anything!

    I've tried 3 other recipes and finally one that is beautiful, thanks for sharing! Will be making this one all the time now. Very easily made dairy free with nutalex and rice/almond milk in the icing.

    Used GF cornflakes instead of GF Weetbix. Added peppermint oil to icing. Easy to make. Cooked beautifully. You do need to pour icing onto hot slice so it spreads.
