Golden Spiced Jumbles

Ingredients

Biscuit Dough

  • 60 g Butter
  • 65 g brown sugar
  • 200 g golden syrup
  • 1 egg
  • 300 g plain flour
  • 60 g Self Raising Flour
  • 1/2 tsp bicard soda
  • 1 tsp cinnamon
  • 1 tsp cloves
  • 1 tsp mixed spice
  • 2 tsp ground ginger

Icing

  • 210 g icing sugar, or raw sugar milled to icing sugar
  • 1 egg white
  • 2 tsp plain flour
  • 1 tbsp lemon juice
  • Food colouring, optional

Recipe's preparation

    Biscuit Dough
  1. Place the butter, brown sugar and golden syrup into the TM bowl and heat 4 minutes, 70C speed 1. Cool for a couple of minutes or until 50C or below.

  2. Add the egg and the dry ingredients. Mix 5 seconds on speed 4 and then knead for 30seconds on Dough mode.

    Turn out onto Thermomat or floured board and knead lightly. It is a very sticky dough at this stage. Wrap in the Thermomat and place in the fridge for about 30 minutes. 

    Preheat oven to 180C

  3. Roll out the dough to about 5mm thickness. Cut into desired shapes and place on lined baking trays. 

    Bake for 10-12 minutes till just golden. Cool on racks and ice when cool (optional)

  4. Icing
  5. Mill sugar to icing sugar, 10 seconds speed 9. Add remaining ingredients and mix for 10 seconds speed 4. If you want more than 1 colour of icing, separate and stir in the colouring a drop at a time.

    Place icing in piping bag/s or bowl and pipe icing onto biscuits or dip in icing. Leave to dry before placing in airtight container.
