320 grams carrots

  • 320 gram carrots, roughly chopped
  • 200 gram walnuts
  • 130 gram sultanas
  • 95 gram Coconut Flour
  • 70 gram Arrowroot or Tapioca flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 100 gram coconut oil
  • 125 gram rice malt syrup, honey or maple syrup
  • 6 eggs

Cream cheese frosting

  • 250 gram cream cheese
  • 50 gram coconut oil
  • 50 gram ricemalt syrup or other sweetener

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Grate carrot 2 sec/spd 6. Set aside.
  1. Describe the preparation steps of your recipe

  2. Melt coconut oil 5mins/70 deg/spd 2 or until melted

  3. Add honey/rice malt syrup/maple syrup and eggs and mix 20 sec/spd4

  4. Add carrots, sultanas and walnuts and mix 15sec/rev/spd4

  5. Add remaining dry ingredients and mix 30 sec/rev/spd 5 or until incorporated.

  6. Pour into cake tin and bake 35-40 mins 180 degrees.

    Cream cheese frosting:

    Melt coconut oil 3min/70 deg/spd 2 or until melted

    Add all ingredients and mix 15 sec/spd 4.5.

    Allow cake to cook completely before icing.

    Yummy!!

    Few small changes:
    Used 150grams of walnuts
    80 grams of sultanas
    Cooked it in a slice tin for 30 minutes, absolutely perfect!!!!

    I love the cake and is a regular in my house. I do however, soak my grated carrot with maple syrup and vanilla for about an hour. Thanks for sharing
