Healthy Anzac Biscuits

Ingredients

Dry Ingredients

  • 30 grams Linseeds
  • 40 grams coconut flakes, (or desiccated coconut)
  • 50 grams raisans, (or sultanas)
  • 50 grams Cranberries, (or other dried fruit)
  • 30 grams sunflower seeds
  • 30 grams pepitas
  • 30 grams sesame seeds
  • 70 grams almonds, (or other nuts of choice)
  • 150 grams oats
  • 200 grams Self Raising Flour
  • 1 teaspoon mixed spice
  • 1 teaspoon cinnamon, ground
  • 1/2 teaspoon Ginger,ground
  • 1 teaspoon vanilla essence

Wet Mix Ingredients

  • 100 grams raw sugar
  • 200 grams Butter, (or half butter/half coconut oil)
  • 100 grams honey
  • 1 teaspoon bicarb soda

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Method:
  1. Preheat oven to 180 degrees and line a baking tray with baking paper or Thermomat.

    Add linseed to bowl and mill 10 sec speed 9.

    Add coconut flakes and mill 5 sec speed 7.

    Add raisans and cranberries and turbo x1 for 1 sec.

    Add sunflower seeds, pepitas,sesame seeds, almonds and turbo, x2 for 1 sec. 

    Add oats, self raising flour, baking powder, mixed spice, cinnamon,ginger and vanilla essence and on reverse, 2 sec speed 4. SET ASIDE. 

    Without washing the bowl add raw sugar, mill 10 sec speed 9. 

    Add butter and honey and cook 3 minutes Varoma  temp sp 2.

    Scrape down and cook another 3 minutes on Varome temp sp 2

    Scrape down, add bicarb and stir 10 sec sp 2. 

    Add dry ingredients. 

    Stir 20 sec, reverse, sp 4. Can assist with spatula if needed. 

    Tip out onto baking tray and press flat with your hands.

    Bake for 20 minutes till golden on top. 

    Cut immediately in squares when it comes out the oven and lift tip over on rack to cool. Break into cut sqares when cold. Remember to use spatula if you used a Thermomat.

Tip

Can replace self raising flour with spelt flour, but add 2 extra teaspoons of baking powder. 

Can roll in walnut sized balls and press slightly flat with a fork. This will give you a much harder biscuit.

    it with 2. Also confused about the instruction at the end for getting it out the pan....

    very crumbly when hot so next time I will leave to cool

    in the tray before touching it! A big yum from the whole family.
