- 1/2cup --- brown rice
- 1/2cup almonds
- 1 cup dates/or raisins etc
- 3 eggs
- 1/2 cup vegetable oil
- 1/2cup Sr flour( or GF)
- 1 teaspoon baking powder
- 1/2 teaspoon bicarb soda
- 1/2cup brown sugar

Recipe's preparation
Grind brown rice for 1 minute speed 10( 30 seconds if you like grainy texture)
Add chopped carrots, bananas, almonds and dates and chop on speed 7 for 5 seconds( or until chopped to your taste)
Add all remaining ingredients and mix on speed 5 for 20 seconds.
Poor into loaf tin and cook in pre heated oven at 160C for 50 minutes or until firm( may need extra 10 minutes).
Serve hot or cold. Best with butter.

Thanks for a lovely recipe. I have made a few times now and it’s always enjoyed by all. I leave out the sugar (it’s sweet enough for us), use the dates and avocado oil instead of vegetable oil. This recipe is definitely a keeper.

I always like substituting for my preferred ingredients: so I used half brown flour and half quinoa, swapped the oil for butter and the brown sugar for rapadura sugar.

I get a bit tired of all the banana cake spin offs but this was delicious and a hit in our house! Great toasted with a bit of butter as well PS Thanks to Charmaine for adding weights into comments. Made it a quicker process.

Was a hit with the kids! I also used saltanas in place of dates & 1 large carrot. I also only used half the oil amount. Here are the measurements in grams to help out & save using a measuring cup:
brown rice: 109g; Saltanas: 160g; almonds: 60g; S/R flour: 70g; brown sugar: 90g; oil: 45g

so easy and so delicious, used sultanas as I had not dates. Needs a slightly bigger tin than normal loaf tin otherwise, perfect!
