Healthy Breakfast muffins

Ingredients

  • zest of half an orange
  • 100 grams carrots, chopped into chunks
  • 125 grams pitted dates
  • 220 grams natural yoghurt
  • 75 grams Rice Bran Oil
  • 1 egg
  • 60 grams fresh orange juice, (approximately half an orange)
  • 85 grams Plain Wholemeal Flour
  • 150 grams plain flour
  • 2 teaspoons bicarbonate soda
  • 1 teaspoon mixed spice
  • 50 grams brown sugar
  • 30 grams wheat germ

Recipe's preparation

  1. Preheat oven to 200 degrees and line a muffin tin with patty pans (or grease well).

  2. Place orange peel in bowl and grate for 8 seconds speed 9 (I actually don't do this step, but instead use a microplane to zest the orange straight into the bowl at Step 4).

  3. Add carrot and dates to bowl and grate for 15-20 seconds on speed 6. Scrape down the sides.

  4. Add yoghurt, oil, (orange zest if not added earlier), orange juice and egg to the bowl and mix for 10 seconds, speed 4 reverse.

  5. Add all remaining ingredients (mixed spice, flours, sugar, wheatgerm, bicarb) and mix for 15 seconds, speed 4, reverse.

  6. Fill muffin tray cups almost to the top and bake for 13 - 15 minutes. (Takes 13 mins in my fan-forced oven).

    These are so yum. I mix it up with whatever I’ve got in the cupboard. Sometimes I add a banana, sultanas, oats instead of wheat germ.. they turn out so wel every time and my toddlers love them too. Thank you!

I did make some changes for extra nutrition/taste preference - I used 30g chia seeds instead of wheat germ, added a handful of sultanas at the end, only used 60g dates and added a banana, used 25g maple syrup instead of brown sugar, didn’t put orange peel in, added 1tsp cinnamon.

    Lovely light muffins. Used all white plain flour, used rolled oats instead of wheat germ and all an orange zest. Would use more sugar next time. Might try almond meal next time too.

    Instead of mixed spice I just used cinnamon. Also used flaxseed meal & brewer's yeast instead of wheat germ to boost my milk supply.

    What a versatile recipe! I stumbled across this recipe when I was looking for a muffin to have alongside my smoothie in the morning.

    I used honey instead of sugar and coconut oil as it was what I had on hand and threw in some chia seeds and pepitas at the final stage.

    Will definitely be using this recipe again!!!

    Delicious. I had to tweak the recipe slightly as I only had white self raising flour. I used maple syrup instead of sugar. Omited the wheatgerm as I didnt have any.     So glad to have found a healthy muffin recipe that tastes so yummy! Used chia & linseeds instead of the wheat germ. Reduced sugar to 25g, and used mainly wholemeal flour. Great for the freezer.

    Very euro tasting and delicious!  I used 50g coconut oil, white flour only, chia seeds instead of wheat germ and halved the sugar.  Worked perfectly!  This will be my low sugar go to muffin.

    Awesome.  Used the coconut oil & chia seeds & only 30g brown sugar & they were perfect.  Id even try less sugar again.  My 8 year said they were the best muffins ever which is great because she doesn't generally like muffin.  Definitely will make regulary.  Thanks for sharing.

    As my go to yogurt sub I use the same amount of soy/ rice milk with 1 tsp of cornflour added. Works a treat every time. I have soy yogurt but it's too expensive to use in cooking! Hope this helps!

    Coconut cream. Coconut Yoghurt, Soy Yoghurt or Rice Yoghurt could be alternative options. Note that Coconut cream esp. is a higher fat content than Natural Yoghurt.

    What lovely muffins! These will be a regular in our house. Made a few adjustments as recommended by others: 

    - used coconut oil

    - chia seeds instead of wheat germ

    - 1tsp each bicarbonate & baking powder

    The mixture made up 12 full sized muffins and quite a few mini muffins for miss 1yr old. Thank you!

    I love these muffins. I make them every week and always use coconut oil instead of rice bran oil and use whatever flour I have got at hand. They come out perfect every time and even my kids love them even though they hate dates. Thank you so much for posting

    Thankyou Thankyou for posting this recipe.  So light, moist and fluffy and guilt free for the kids lunchboxes! I too substituted rice bran oil with coconut oil and wheat germ with chia seeds.  It made 15 decent sized muffins.

    Beautiful light, moist and tasty muffins.   I used LSA instead of wheatgerm, baking powder instead of bicarb and cocounut oil instead of rice bran oil and all went well although took longer to cook than stated in the recipe. Thank you as we will definitely make these again.

    These are honestly the best muffins I have ever made, and believe me I've made plenty. I was 50g short of dates so added some sultanas with the flour etc.  I also didn't have wholemeal flour so used all white flour. They rowe beautifully and cooked to perfection.  Hubby gave big thumbs up and immediately scoffed two.  Oh and I didn't tell him they had dates in them, he hates dates with a vengeance.
