- 125 grams pitted dates
- 220 grams natural yoghurt
- 75 grams Rice Bran Oil
- 1 egg
- 60 grams fresh orange juice, (approximately half an orange)
- 85 grams Plain Wholemeal Flour
- 150 grams plain flour
- 2 teaspoons bicarbonate soda
- 1 teaspoon mixed spice
- 50 grams brown sugar
- 30 grams wheat germ

Recipe's preparation
Preheat oven to 200 degrees and line a muffin tin with patty pans (or grease well).
Place orange peel in bowl and grate for 8 seconds speed 9 (I actually don't do this step, but instead use a microplane to zest the orange straight into the bowl at Step 4).
Add carrot and dates to bowl and grate for 15-20 seconds on speed 6. Scrape down the sides.
Add yoghurt, oil, (orange zest if not added earlier), orange juice and egg to the bowl and mix for 10 seconds, speed 4 reverse.
Add all remaining ingredients (mixed spice, flours, sugar, wheatgerm, bicarb) and mix for 15 seconds, speed 4, reverse.
Fill muffin tray cups almost to the top and bake for 13 - 15 minutes. (Takes 13 mins in my fan-forced oven).

I did make some changes for extra nutrition/taste preference - I used 30g chia seeds instead of wheat germ, added a handful of sultanas at the end, only used 60g dates and added a banana, used 25g maple syrup instead of brown sugar, didn’t put orange peel in, added 1tsp cinnamon.

As my go to yogurt sub I use
As my go to yogurt sub I use the same amount of soy/ rice milk with 1 tsp of cornflour added. Works a treat every time. I have soy yogurt but it's too expensive to use in cooking! Hope this helps!

I make these every couple of
I make these every couple of weeks and freeze. Have reduced the sugar to 20grams and omit the orange peel and still taste great. Also just use plain flour.

What lovely muffins! These will be a regular in our house. Made a few adjustments as recommended by others:
- used coconut oil
- chia seeds instead of wheat germ
- 1tsp each bicarbonate & baking powder

Thankyou Thankyou for posting this recipe. So light, moist and fluffy and guilt free for the kids lunchboxes! I too substituted rice bran oil with coconut oil and wheat germ with chia seeds. It made 15 decent sized muffins.

Beautiful light, moist and tasty muffins. I used LSA instead of wheatgerm, baking powder instead of bicarb and cocounut oil instead of rice bran oil and all went well although took longer to cook than stated in the recipe. Thank you as we will definitely make these again.

These are honestly the best
These are honestly the best muffins I have ever made, and believe me I've made plenty. I was 50g short of dates so added some sultanas with the flour etc. I also didn't have wholemeal flour so used all white flour. They rowe beautifully and cooked to perfection. Hubby gave big thumbs up and immediately scoffed two. Oh and I didn't tell him they had dates in them, he hates dates with a vengeance.
