Healthy Pancake Muffins

  • 50 grams Butter, Cubed
  • 2 eggs
  • 220 grams Wholemeal Self Raising Flour
  • 250 grams Milk
  • Strawberries, Dried Apricots, Blueberries etc., To Garnish

Recipe's preparation

    Method
  1. 1. Preheat oven to 150 degrees

    2. Melt the butter 2 mins / 80deg / sp2

    3. Add the remaining ingredients and mix 30 secs / sp4

    4. Pour mixture into greased muffin tray

    5. Add garnish onto top of each muffin (I use cut up strawberries, dried apricots and blueberries. You can also use chocolate chips or sprinkles)

    6. Place into preheated oven and bake for 15 mins or until your skewer comes out dry

Tip

If you would prefer them a bit sweeter, add in about 70 grams of sugar into step 3
