Heston Inspired Lemon Myrtle Easter Buns with Whipped Citrus Butter

Ingredients

Dough

  • 10 lemon myrtle leaves, I was lucky to have fresh ones, so adjust to taste
  • 1 ginger knob, fresh (I beleive heston uses crystallized ginger)
  • 1 orange zest
  • 1 lemon zest
  • 1 heaped teaspoon cinnamon
  • 7 grams dried instant yeast, or 40g fresh yeast
  • 250 grams Milk
  • 50 grams marmelade
  • 600 grams bakers flour, or I use 300g spelt flour & 300g bakers flour
  • 2 teaspoons salt
  • 70 Butter
  • 1 egg
  • 100 grams sultanas
  • 100 grams sultanas

Whipped Citrus Butter

  • 75 grams marmelade, (Thermie made of course)
  • 250 grams Unsalted butter, softened, (made in the Thermomix)

Recipe's preparation

    HESTON INSPIRED LEMON MYRTLE EASTER BUNS
  1. Place zest, ginger & lemon myrtle leaves into the TM bowl & chop for 5 secs speed 7. If it is not chopping well add about 50g of the flour & chop again.

    Next add milk, marmelade and yeast into mixing bowl with the cinnamon and heat 1 min/37deg/speed1.

    Add flour, salt, butter, egg and mix 6 sec/speed 7 then knead 2-3 minClosed lidDough mode.

    Add sultanas & currants and combine 10-15 sec/reverse/speed 5.

    Allow to rest in warm place covered with tea towel for 30-40 minutes then divide into 12 buns & place on baking tray covered with baking paper. Allow to rise in a warm spot.

    Preheat your oven to 200 degrees.

    Bake for 20 -25 mins until golden brown. Brush with some extra marmelade to glaze them.

  2. Whipped Citrus Butter
  3. Place all ingedients into the TM bowl add the butterfly & whip for 4 mins speed 4. Place mixture into piping bag & pipe crosses over slightly cooled buns. Any leftovers of this mixture are great to spread directly onto the buns when you cut them open.

Tip

You may prefer to use white chocolate chip buns instead of the fruit!!

If you like you white crosses on top try melted white chocolate crosses.

I got this idea from seeing Heston's Lemon Myrtle Hot Cross Buns that are being sold at Coles supermarket's this year & thought I would try & make my own!!
