Honey, Cinnamon and Plum "Pudding-Cake"

Ingredients

8 portion(s)

  • 250 g plain flour
  • 1 tsp baking powder, heaped
  • 1 tsp bicarbonate of soda
  • 1 tsp cinnamon
  • 200 g golden syrup
  • 2 tbsp thick honey, heaped
  • 120 g Butter
  • 120 g light muscovado sugar
  • 350 g plums
  • 2 large eggs
  • 240 g Milk

Recipe's preparation

  1. Pre-heat oven to 180˚C. Line a 24cm square cake tin with baking paper.

  2. Halve the plums, or cut them into quarters if they are very large, then pull out their stones. Set plums aside.

  3. Add flour, baking powder, bicarbonate of soda and cinnamon to TM bowl and mix on speed 3-4 for 20 seconds to combine and aerate. Set aside.

  4. Add golden syrup, honey and butter to TM bowl and melt at 60˚C on speed 2 for 1-2 minutes or until melted. Add muscovado sugar and mix on speed 2 for 10 seconds to combine.

  5. Add eggs, milk and flour mixture and mix on speed 5-6 for 20-40 seconds or until mixture is combined. You should have a sloppy batter without any traces of flour.

  6. Pour mixture into prepared tin. Drop in plums and bake for 35 minutes. Place a piece of foil loosely over the top of the cake and bake for a further 15 minutes. Switch off the oven, but leave the cake in for an extra 15 minutes, then remove and leave to cool.

Tip

This cake is delicious served for afternoon tea with a jug of cream on the table.

You can substitute brown sugar or rapadura sugar for the muscovado sugar.

    Made this last night with greengages. Because this type of plum is quite sweet I cut back the quantities of all the sweet ingredients. While I was happy with the result I think the more tart types of plums work better and give a more balanced flavour.

    This one is a conversion from Tender, Volume II by Nigel Slater. A fabulous book for using seasonal fruit. We had this cake as an afternoon tea on the weekend and it was delicious!
