Kids Oaty Chia Muesli Bars

Ingredients

12 piece(s)

Mixture

  • 50 grams Butter
  • 20 grams coconut oil
  • 70 grams marshmallows
  • 60 grams rice bubbles
  • 40 grams Coconut, shredded
  • 70 grams rolled oats
  • 40 grams craisens
  • 30 grams sultanas
  • 40 grams chia seeds

Recipe's preparation

    Method
  1. 1. Add butter, coconut oil, and marshmallows to TMClosed lid. Cook 3 min/80 deg/speed 2

     

    2. Add remaining ingredients and mix 25 sec/speed 4 until combined

     

    3. Spread in slice dish and press down firmly (using baking paper and a spoon, or with a lighlty oiled spoon).

     

    4. Refrigerate for 1 hour before slicing

Tip

Feel free to substitue any of the dried fruit to suit your taste such as chopped apricots instead of craisens...

While I would prefer not to use marshmallows at all, they help to bond the muesli bars and 'everything in moderation' is my motto!

Recipe can easily be doubled without adapting any of the method.

    Ive made this a few times now and i love it. My 5yo is a fan for his lunchbox if he can keep his father away from them long enough. I like the addition of chia seeds and would like to experiment with dried apple and walnuts for the next batch. 

     One thing is the sugar doesn't appear in the method at all, I've been melting it with the oil, butter and marshmallows, and slowly trying to reduce it each time, down too 35g today with a touch extra coconut oil, still works well and kid approved xo

    Good easy recipe, nice flavours. The chia seeds are a bit annoying though, they fall off, get stuck in your teeth etc. I'd skip the chia seeds next time. I substituted butter for coconut oil as I couldon't get it.
