Vanilla Cake Mix

  • 140 grams raw sugar, or Icing Sugar (unmilled)
  • 140 grams Self Raising Flour
  • 170 grams Butter, at room temperature
  • 3 eggs
  • 1 teaspoon Vanilla Bean Paste (or Extract)

Vanilla Icing

  • 260 grams raw sugar, or Icing Sugar (unmilled)
  • 110 grams Butter, at room temperature
  • 1/2 teaspoon Vanilla Bean Paste (or Extract)
  • 2 tablespoons Milk

Decoration

  • 2 Kit Kat Family Chocolate Blocks
  • 1 Large Packet of M&Ms/Smarties

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Vanilla Cake Mix
  1. Spray two 20 cm cake tins with cooking oil spray and line bases with baking paper. 

    Preheat oven to 180 degrees C

    Place raw sugar in TM bowl and process/mill for 10 seconds on speed 9. (skip this step if already using icing sugar)

    Add the butter and mix together for 20 seconds on speed 5.

    Scrape down the sides and set blades going on speed 5 and add eggs one at a time through the hole in the lid.  This will take about one minute.

    Add the flour and vanilla bean paste and mix for 10 seconds on speed 5.  If not quite incorporated scrape down and turn quickly up to speed 6 for a second.

    Pour into prepared cake tins and bake for 20 to 25 minutes until a skewer inserted, comes out clean.  

    Allow to cool in tin for 5 minutes before removing and cooling on cake rack.

    Allow cakes to cool right down before icing.

  2. Vanilla Icing
  3. To make the icing place raw sugar in TM bowl and process/mill for 10 seconds on speed 9. (skip this step if already using icing sugar)

    Add butter, vanilla bean paste and milk and mix for 10 seconds on speed 5.

    Spread slightly less than half the icing over one cake and then place the second cake on top.  Swirl the rest of the icing on the top and sides of the cake.

     

    Decorate the cake by breaking the Kit Kats into vertical pieces of 2 and arrange around the diameter of the cake. ( I also broke the Kit Kats in half length ways as my cakes did not rise enough!) Fill the top of the cake with the full packet of M & M's/Smarties.

Tip

*Double the mixture so your cakes hopefully rise higher.

*Make this into a chocolate cake by adding cocoa powder to the cake mix and melt dark or milk chocolate buttons for the icing.

*Great recipe and lots of fun to get the kids baking!

*Raw sugar is much cheaper than icing sugar.
