Recipe is created for
TM 5
If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Place sugar and the peel from one orange in the bowl and pulvarise for 20 seconds, speed 10.
Cube butter and add to the bowl. Mix for 3 minutes on speed 4, until light and creamy.
Beat the eggs in a separate bowl, reserve about 2 tablespoons for the egg wash at end, tip the rest into the TM bowl, along with vanilla essence and juice from the orange. Beat for 1 minute on speed 4.
Add the dry ingredients, (except for sesame seeds) and mix for 10 seconds on speed 6.
"Dough mode" for one minute. You may have to assist by placing the spatula through the opening. Then turn dough out onto the thermomat and slightly hand knead and shape into a rectangular blok. The dough will be sticky but there is no need to add any more flour, rather place it in the fridge to chill for an hour.
Take the dough out of the fridge ten minutes or so before working on it. Break off a piece about the size of a small walnut. Roll out to a long thin piece, like a pencil (about 20cm long) then double over and twist.
Place onto a lined baking tray, allowing room for expansion. Glaze with reserved egg wash and sprinkle with sesame seeds.
Bake in a moderate oven, 180 degrees, for 15 minutes.
Allow the koulouria to cool on a wire rack and then store in an airtight container. These will keep for a few weeks.

These were unbelivable! The recipe was so spot on and i come from a Greek family who has been making Koulourakia for generations. My mum actually said they tasted better than both my yiayias! Will be my go to recipe every Easter, thank you so much for posting.

Yum!
Not quite Easter, but perfect excuse to make for friends today. Forgot to egg wash the first batch and they turned out just as well as the ones I did manage to put egg wash on.
thanks for sharing
I only just made them today
I only just made them today and it was perfect. I think the reason the mixture may break easy is because of the amount of orange juice. Recipe says 1 orange but some are juicier than others. My orange made just over 1/4 cup juice and it was perfect.
Great recipe, Easy and
Great recipe, Easy and delicious. I used 200 grams sugar instead of 250. I didn't need to place the mixture in the fridge. It was perfect to roll. I was going to make them the traditional way my mother used to then thought I would try this recipe and it is perfect. So much easier. Thankyou

Thanks for the recipe. My mum used to make these every Easter but hasnt done so for the last couple of years due to her age. So I made these and took them over on Sunday for the orthodox Easter and she said they tasted exactly like the way she baked them. So there is a huge compliment for your recipe.

This recipe produces a lovely result however I find that it is difficult to get out of the thermomix. It also breaks easily when shaping koulourakia - what can I do to fix that?
I do like how you can make thin, nicely shaped koulourakia rather than the fat ones I have seen elsewhere and they also have a lovely taste.
