Lemon Butter Teacakes

Ingredients

Teacakes

  • 65 g Butter, softened
  • 100 g caster sugar
  • 1 egg
  • 2 teaspoons vanilla essence
  • 140 g Self Raising Flour
  • 80 g Milk
  • 4.5 tablespoons Lemon Butter

Topping

  • 10 g Butter, melted
  • 2 teaspoons caster sugar

Recipe's preparation

  1. Preheat oven to 180/160 fan forced. Line 12 cup muffin tray with paper cases.

  2. Beat butter, sugar, egg and vanilla. Spd 4, 20 secs.

  3. Add flour, milk and 2 tablespoons lemon butter. Mix spd 4, 10 seconds or until combined. Stir with spatula to ensure flour is incorporated.

  4. Spoon into prepared cases and top each with 1 teaspoon of remaining lemon butter.

  5. Bake for 15-20 minutes or until golden and firm to touch.

  6. Brush hot cakes with butter, sprinkle with caster sugar.

    I made these this morning, I made the lemon curd first 3am, then made the cakes.

    very yummy, hubby of course had to taste test first, then took 3 to work, will be making again.

    i doubled the recipe, and they took 35 mins to cook as I have a stupid oven  Cooking 7  tmrc_emoticons.)

    I made the lemon curd first @ 3am this morning, I don't have a baby or small children at home just couldn't sleep, so when I can't sleep I cook. I doubled the mixture and made the cakes at 4am, hubby has just left for work with 3 cakes, that's after taste testing them first lol.

    will become a firm favourite here, I will be making them gor the family when we go to Adelaide at Christmas time. Thank you very much for sharing your recipe.  tmrc_emoticons.)  Cooking 7
