Cake

  • zest from 2 lemons
  • 120g sugar, or your chosen sweetner- I use coconut sugar
  • 125g Butter
  • 2 eggs
  • 250g sour cream, or plain yoghurt
  • 50g lemon juice, peel the zest off before juicing to use zest in cake
  • 380g SR flour, or your chosen flour eg spelt
  • 1/2 baking powder

  • 50g sugar
  • 150g water
  • 40g fresh passionfruit

Recipe's preparation

    LEMON CAKE WITH PASSIONFRUIT SYRUP
  1. Preheat oven to 180 degrees.

    Place lemon zest & sugar into TM bowl chop for 10 secs speed 10. Add all remaining cake ingredients & chop for 10 secs speed 5, scrape down bowl & repeat. 

    Place mixture into a greased 24cm cake tin. Bake for 40 mins or until cooked through.

    While cake is in the oven place all the syrup ingredients into the TM bowl & cook for 10 mins 100 degrees Counter-clockwise operation speed 1. MC off & basket ontop.

    Allow cake to cool slightly for 5 mins & pour half the syrup over the cake.

    Delicious served warm with extra syrup & whipped cream!!
