- 150 g raw sugar
- 90 g coconut oil or butter, cut into chunks, (can use 1/2 of each)
- 90 g Greek yoghurt
- 30 g Milk
- 1 egg
- 20 g lemon juice
- 130 g Coconut
- 1 tbsp baking powder
- 220 g flour

Recipe's preparation
Pre-heat oven to 175 degC and lightly grease 12 hole muffin tin (or use muffin cases)
Place lemon peel and raw sugar into bowl and pulverise for 5 sec/ speed 9.
Add all other ingredients and mix for 15 sec/speed 5. Scrape down sides of bowl and mix further 5 sec/ speed 5.
Spoon even amounts into each muffin hole. Bake 15-20 minutes until lightly golden.

Made these muffins today, absolutely delicious wth the coconut and lemon flavour. I made exactly as the recipe says and had no trouble with muffins being dry. The mixture was a bit dry but no reflection on the end result. Thank you for sharing your recipe
Delicious I wasnt sure what flour so added half...
Delicious! I wasn't sure what flour so added half plain/half SR. I also used up some left over lemon curd in the middle of each muffin. Would only recommend coconut oil in summer/warm climate. There was some chunks left at the bottom of the blades. Also added more milk as per others suggestions, maybe 45ml? Thanks for posting!

Really nice flavour, I did add a little extra milk as the raw batter seemed a little dry. Also I just chucked in the whole lemon in step one (knowing it was a thin skinned one). They came out a tad crumbly but still good, and very easy

Thanks Annie 24 for a Lovely recipe - I made a few changes by using ingredients on hand - used lime zest and added some tinned apple, bran - delish!
what I like most bout this recipe is that the muffin does not stick to the wrapper, comes away nicely so 1/2 of it is not left behind which I have found can happen in other recipes. I want to try and double the recipe so it makes more as I like to freeze for lunch boxes.
