Lemon Slab Cake

  • 200g sugar raw
  • zest from 2 lemons
  • 220g butter, soft
  • 2 eggs
  • 200g sour cream, or plain yoghurt (or Kaffir Yoghurt)
  • 30g lemon juice
  • 300g plain four, or spelt flour
  • 2tsp baking powder
  • 1tsp vanilla extract

  • 200g sugar
  • 1 1/2tbs lemon juice

Recipe's preparation

    Lemon Slab Cake
  1. Place sugar & lemon zest into TM mill for 20 secs speed 10.

    Add butter & melt for 2 mins 50 degrees speed 2. Then add the remaining wet ingredients and mix for 5 secs speed 5. add the flour & baking powder & mix for 5 secs speed 5, scrape down sides of bowl if needed & mix for another 5 secs on speed 5. Pour mixture into prepared tin either square or rectangle tin lined with baking paper. Bake in a 180 degree oven for 30 mins. Allow cake to cool completely before pouring icing over.

  2. Lemon Icing
  3. Place sugar into dry clean TM bowl & mill for 10 secs speed 10. Add lemon juice & mix for 5 secs on speed 5.

Tip

You can make this into an orange slab cake or a lime slab cake by substituting the ornage or lime for the lemon juice & lemon zest.

    I halved the sugar and added coconut yogurt and it was absolutely delicious! Wasn't sure how it would turn out as it didn't rise as expected but was so moist and fluffy! Added a lemon cream cheese frosting & Hubby said it's possibly the best cake I've made! Saved into Cookidoo for future reference! Thanks heaps!

    Love this lemony lemon cake. So easy with ingredients I had in my kitchen. I have never had a lemon cake with so much flavour. I didn’t make the icing as my hubby doesn’t like it but it honestly doesn’t need it. If I was taking the cake out or serving it to guests I would make a cream cheese frosting as someone else previously suggested.
    I cooked the cake in a ring tin & it cooked in 35mins at 190 degrees fan forced. (My oven is 5-10 degrees cooler)
    Thank you for this delicious recipe. In the oven again at the moment cooking it for a friend 😃

    This was amazing! I halved the lemon zest and this was the perfect amount for my family. Didn't have quite enough greek yoghurt so I added a bit of milk (40g) and I dropped the sugar by 20g, will drop by another 20g next time I make it too.

    Added some philly cheese to the icing and a bit more lemon zest to make a lemon cream cheese icing and it was perfect!

    thanks for another lovely recipe. I used a vegetable peeler to ensure I got all the zest from the lemon, and my cake had a good balance of lemon flavour and sweetness. I also used Gippsland dairy plain sweetened yogurt.

    Delicious!.................I didnt have sour cream so substituted with light evaporated milk with white vinegar added! ( 1Tbls white vinegar add light evapoated milk to make 1 Cup, just added the 200g to the recipe so had a bit left over )..... very light & fluffy ......my husbands comment was fantastic!!

    A lovely cake. I made this gluten free (Aldi flour) and it was super light and fluffy. The actual cake wasn't a very strong lemon flavour, it was the icing that gave the flavour so next time I will add more lemon juice to the cake. Thanks for sharing tmrc_emoticons.-)

    Unfortunately my attempt didn't go so well.  I used a loaf tin and perhaps this was too deep for the mixture to cook properly.  It would be good to add suggested dimensions for the tins to be used / depth of mixture for novice bakers like me.  The flavour was good though!
