Lemon cupcakes

  • Zest and juice of 1 lemon
  • 1/2 - 1 cup caster sugar, to taste
  • 1 egg
  • 1/2 cup sour cream
  • 1/2 cup plain flour (sifted)
  • 1/2 cup self-raising flour
  • 80 g unsalted butter, softened

Lemon buttercream icing

  • 70 g cream cheese, softened
  • 30 g unsalted butter, softened
  • 300 g pure icing sugar
  • Juice 1/2 lemon

Recipe's preparation

    Lemon sour cupcakes
  1. Preheat oven to 160C. Grease or line (using patty pans) a 6 hole muffin tray. Set aside.

  2. Place lemon zest into mixing bowl and chop 10 sec/speed 7, or until quite fine. Set aside.

  3. Insert butterfly. Place butter and sugar into mixing bowl and beat 20 sec/speed 3, or until pale, creamy and evenly combined.

  4. Add egg and beat for a further 20 sec/speed 3, or until evenly combined. Remove butterfly.

  5. Add sour cream and the two flours and combine 10 sec/speed 5.

  6. Add reserved lemon zest and lemon juice and mix 10 sec/speed 3.

  7. Spoon mixture into prepared tray (or patty pans) and bake in the oven for 15 - 20 minutes, or until an inserted skewer comes out clean. Set aside to cool while you prepare the icing.

  9. Insert butterfly. Place all ingredients into mixing bowl and beat 20 sec/speed 5. Top cooled cupcakes with icing (see Tips) and leave for a minimum of 30 minutes at room temperature, or in the refrigerator (if you're in a hurry) and allow to set before serving.

Tip

Place your icing into a piping bag with a star-shaped nozzle to create beautiful swirly icing on top of your cupcakes (as you can see, I was feeling lazy when I made these for the photo...)
