  • 65 g sugar
  • 170 gSR flour
  • 1 tsp vanilla essence
  • 120 g unsalted butter, cubed

  • 140 g sugar
  • Zest and juice 2 Limes, (or 1 lemon)
  • 25 g unsalted butter
  • 1 large egg
  • 40 gSR flour

Recipe's preparation

  1. Base
    Method





    Preheat
    oven to 170ºC and butter and line a 20cm square baking pan.



    Place
    sugar into TM bowl and mill for 10
    seconds
    on speed 10.



    Add
    remaining ingredients and mix for 20
    seconds
    on speed 6. Press dough
    into tin and bake for 15 minutes.







    Topping
    Method





    Place
    sugar and zest into TM bowl and mill for 10
    seconds
    on speed 10.



    Add
    butter and mix for 6 seconds on speed 5.



    Add
    remaining ingredients (including juice) and mix for 15 seconds on speed 9.



    Pour
    over baked base and cook a further 25-35 minutes until just wobbly in centre.



    Dust
    with icing sugar and serve with fresh or frozen berries.

    ive noticed in quite a few recipes they dont mention the size of trays.

    Thanks for the feedback on the cooking time…I think your oven must be running on the hot side if it was set to 150 and that was too long…try a little lower on the temp rather than quicker…please let me know how it goes. tmrc_emoticons.) Enjoy!

    Hi Tenina, Thanks for this recipe.  I made it today and it was delicious; even my fussy 2 and 4 year old little ones loved it, and it's always hard to get them to try a new strong flavour like lime.  I tried it on 150 Fan forced and 25  mins was too long in my oven.  I will definitely try it again to get it perfect. Yumm!!!
