  • 265 g castor sugar
  • 200 g Butter
  • 100 g Desiccated Coconut
  • 110 g plain flour
  • 6 eggs
  • 250 g Milk
  • 200 g sour cream

  • 2 tablespoon icing sugar, to serve

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Preheat oven 150C.

    Grease a 27cm pie dish (or lately I've been using 2 x 23cm glass Pyrex pie dishes)

    Peel lime with a vegetable and place in bowl with sugar and chop for 3 sec, sp 9.

    Add butter and melt 3 min 50 sp 2

    Add rest of ingredients and mix 30 sec, sp 4.

    Pour into prepared pie dish and cook for 1 hour.

    Serve warm, dusted with icing sugar.

    Suitable to freeze.

    Also cooked with less sugar and taste was great. I split the mixture between a greased Pyrex pie dish and a lined cake tin. Worked fine in both. Even with splitting mix into two dishes definitely took the full hour to cook maybe even more to get colour and texture. Very tasty and simple. I'd cook it again.

    Very delicious. Reduced sugar to 180g. Still a little bit too sweet for my taste. Used Greek yogurt instead of sour cream by mistake but it turned out very nice. Thanks for sharing

    YYYUUUMMM, while cooking I thought I ruined it at first, it looked lumpy, I had to cook a little longer as my pan was deep, perfect yum, love this, will do again, thank you

    Also cut sugar down to 180g and baked in a deeper dish and needed to extend baking time by an extra 25 minutes. Will definitely make this again. Yummmmm'!!!!!!!

    I used lemons instead of limes and, like John, reduced sugar to 180g. I didn't have a ceramic pie dish, so I used a lined, spring form tin and it turned out perfectly.

    Despite not having any limes, I made this yesterday with lime juice in a bottle.  It turned out not too bad, but I think it needs the flavour kick of lime zest.  I wouldn't recommend making it without fresh limes!

    This recipe was a winner! A friend recently gave me a supply of ripe limes and this recipe jumped out at me. As per the comment from Adam and Kate, I made this recipe using GF flour and it was beautiful. I did cut down the sugar to 180 g and it was just the right sweetness for us. It was perfect served with a dollop of Greek Yoghurt.

    Highly recommended!

    Absolutely delicious!

    Needed a bit longer to cook as I had a deep dish, just waited until the top went golden. Also used gluten free flour instead of plain, worked a treat. Was a hit with everyone who tried it Big Smile

    We did this in our TM31, no issues with capacity.
