Little Chai Spice Cakes with Earl Grey Tea Syrup

Ingredients

Spice Cakes

  • 125 g unsalted butter, softened
  • 200 g brown sugar
  • 3 eggs
  • 75 g plain flour
  • 75 g Self Raising Flour
  • 45 g Desiccated Coconut
  • 60 g natural yoghurt
  • 1 level teaspoon cinnamon
  • 1/2 level teaspoon ginger
  • 1/2 level teaspoon ground fennel
  • 1/2 level teaspoon ground cardamom (or you can mill this before you start)
  • 1/2 level teaspoon ground cloves
  • 1 pinch ground white pepper

earl grey tea syrup

  • 4 earl grey tea bags
  • 1 stick cinnamon
  • 2 pods cardamom, bruised
  • 250 g Boiling water
  • 100g caster sugar

Recipe's preparation

  1. Preheat oven to 160 (fan forced)

    place sugar and butter in TM bowl and process at 37℃ for 30 seconds at speed 4

    insert butterfly and add eggs. Process for 30 seconds speed 4

    add flour, spices and yoghurt and process for 30 seconds - 1 minutes speed 4

    Pour into greased moulds and bake for 20-25 minutes as friands, 12-15 minutes as mini muffins, 9-10 minutes as madeleines.

  2. For Syrup, place tea bags, cinnamon stick and cardamom pods in a saucepan and pour over boiling water. Infuse for 5 minutes. Remove and discard tea bags. Add the sugar and place over low heat to dissolve. Increase heat to high and bring to boil. Cook for 5 minutes until syrup thickens. Pour over warm cakes to serve.

Tip

If you like a finer texture, you can blitz all dry ingredients on speed 9 for 10 seconds then set aside and proceed from step one again.

Save leftover syrup in the fridge for next time (because there will be a next time!).

The photo is not terribly flaterring, but these are so tasty served warm with a nice cup of tea that I hope you do try them. When you make your tea, pop some similar spices in with the pot while it brews e.g. cinnamon sticks, cardamom pods, whole cloves, two or three white peppercorns and a peel of orange rind...even a bay leaf! Instant home made Chai!

The ingredient list is long, but it is very quick to throw together.
