Low-Fat Choc-Orange & Walnut Brownies

Ingredients

Brownie Mix

  • 220 g raw sugar
  • 1/2 orange zest, (Use veg peeler to peel zest off half an orange)
  • 45 g walnuts
  • 70 g cocoa powder
  • 110 g jar of baby apple, (Heinz baby-food or TM-made apple puree)
  • 3 egg whites
  • 30 g oil - any type, (I use melted coconut oil or macadamia oil)
  • 1/2 teaspoon Vanilla extract (or paste)
  • 75 g plain flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon cocoa powder, to dust, extra (optional)

Recipe's preparation

  1. Pre-heat oven to 180 degrees and line a square cake tin (or small oven tray) with baking paper - allowing the ends of baking paper to overhang the sides.

     

    Place raw sugar and orange zest in TM bowl and mill 15 seconds, speed 9 (or until zest is finely grated). You may need to scrape the TM bowl and mill again - especially if the zest is damp.

     

    Add walnuts and roughly chop, Closed lid, then pressing turbo 2-3 times or until desired consistency. (I tend to leave mine quite chunky)

     

    Add cocoa powder, baby apple, egg whites, oil, and vanilla to TM bowl and mix speed 4 for 10 seconds or until combined.

     

    Add flour and baking powder together in the TM bowl over the cocoa mixture. Mix gently on speed 3-4 for 10-15 seconds until well combined.

     

    Using the spatula, pour mixture into lined tray and bake in preheated oven for 30 minutes or until a skewer inserted into centre comes out clean. Set aside for 5 minutes before turning onto a wire rack to cool.

     

    Dust with cocoa if desired and slice into squares.

Tip

Can substitute walnuts for macadamias, pecans, cashews etc OR omit nuts altogether.

 

Can also leave zest out for a plain choc-walnut brownie

    These were SO GOOD!  I substituted some of the white flour with wholemeal and left out the orange zest as I didnt have any at home.  Next time I will try cutting down the oil and sugar slightly to see if I can get away with less of it to make it even healthier.

    Absolutely love these brownies. The orange zest gives them a lovely aroma and an exclusive flavour. I substituted cacao for cocoa, so not sure if that gave the brownies a rich  dark chocolate taste or if they taste like that  with cocoa too. The kids loved them too, but can easily pass as a more upmarket brownie for adults. Thank you for the recipe.  tmrc_emoticons.)
