Maple Syrup and Pecan Muffins

Ingredients

Muffins

  • 90 g raw sugar
  • 30 g brown sugar
  • 180 g SR flour
  • 1.5 tsp baking powder
  • 1.5 tsp Vanilla Bean Paste
  • 2 eggs
  • 80 g Butter
  • 50 g Milk
  • 75 g Quality Maple Syrup
  • 50 g Pecan Pieces

Butter Cream icing

  • 150 g raw sugar
  • 50 g Butter
  • 5 g Milk

Recipe's preparation

    Muffins
  1. Pre-Heat oven to 170 degrees celsius.


    Line a 12 Bay Muffin Tin with Paper Muffin Liners.  Set aside.


    Place Both sugars in the TM Bowl.  Mill for 10 sec / speed 9.


    Add SR Flour & Baking Powder.  Mix for 5 sec / Speed 5.


    Add Vanilla Bean Paste, Eggs, Butter, Milk and Maple Syrup.  Mix for 7 sec / speed 5.


    Add Pecan Pieces.  Mix on reverse, 5 seconds / speed 4.


    Spoon mixture into Muffin Liners, about 1/2 full for each Muffin.


    Bake for 20 mins or until golden brown and muffin springs back when you gently push them.  Note - do not over cook - or your muffins will come out dry.


    Remove from oven and transfer Muffins to a wire rack to cool.


    Ice with Butter Cream Icing and top with a piece of pecan once muffins are completely cool.

  2. Butter Cream Icing - once muffins are completely cooled.
  3. Add Sugar to TM Bowl.  Mill for 20 seconds.  Allow to stand for 30 seconds to cool.  Mill for a further 20 seconds.  Allow to stand for 30 seconds to cool.  Mill for a further 20 seconds.


    Add Butter to TM Bowl.  Mix at speed 5 / 10 seconds.  Scrape sides of TM Bowl down with a silicon spatula.


    Add Milk.  Mix on speed 3 for 10 seconds.  Scrape sides down with silicon spatula.  Mix again on speed 3 for a further 10 seconds. 


    Add Butter cream icing to a piping bag and pipe little florets onto each muffin. 


    Top with a piece of Pecan and serve.

    Can anyone tell me who tried these i did a bit of altering , pecan nuts not chopped in thermo , put the rest in as instructed , changed 2 different flours to just self raising and mixed as per recipe I had liquid consistancy and had to add 3/4 cup more self raising to get a steady enough mixture ? Hand chopped roughly pecans and slowly stirred and baked 20 mins all good ! Is there something with the flours or size of bananas ( mine were small ????
