Mini Apple and Coconut Cakes

  • 1 granny smith apple, quartered (about 200g)
  • 120 grams butter at room temperature
  • 100 grams raw sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 150 grams plain flour
  • 1 teaspoon baking powder
  • 2 tablespoons Milk
  • 50 grams Shredded coconut

Recipe's preparation

    Mini Apple and Coconut Cakes
  1. Preheat oven to 180 degrees c. 

    Make castor sugar by milling for 4 sec at speed 9.  Set aside

    Chop apple 3 sec speed 5.  Set aside.

    Return sugar to the bowl along with butter and beat for 20 seconds at speed 5

    Add eggs mix for 10 sec speed 5

    Add flour, baking powder, milk and 25g of the coconut and mix 5 sec speed 5

    Add apple and mix 3-5 sec speed 5

    Spoon mixture into 12 friand holes. (use muffin tins if you don’t have friand tins)

    Bake for 20 – 25 mins

    Once cool make icing

    Mill raw sugar for 10 secs at speed 9

    Add 2 tablespoons of warm water and mix for 10 sec speed 5

    Spoon over cakes and sprinkle on remaining coconut

Tip

Using raw sugar for the icing will give a more caramel which tastes great.  However if you prefer a white icing you can use white sugar and mill in the same way, or just use icing sugar

    many thanks....i'm baking at the moment....i'm sure they will be awesome....in your method...you need to add the Vanilla extract into the process...i nearly forgot as i was following your instructions...then checked the ingredients....:0 xxx
