Ingredients

Moist Banana Cake
  • 3 ripe bananas, Peeled
  • 150 g caster sugar
  • 150 g butter, room temperature
  • 2 eggs
  • 240 g Self Raising Flour
  • 1/2 tsp bicarbonate of soda
  • 30 g milk
  • 1 tsp vanilla essence

Recipe's preparation


    1. 1. Preheat oven to 160 C
    2. 2. Place bananas and vanilla essence in the bowl and mix for 5 seconds on speed 4. Set aside.
    3. 3. No need to rinse out bowl. Add butter and caster sugar and mix for 20 seconds on speed 5.
    4. 4. Add the eggs one at a time and combine each for a few seconds on 
    5.    speed 5.
    6. 5. Add the banana mixture and mix for 3 seconds on speed 5.
    7. 6. Add the flour, bicarbonate of soda and milk and mix for 15 seconds on speed 4 to 5.
    8. 7. Pour into a lined 20cm cake tin and bake in the oven for 1 hour. If cake still looks wet after this time reduce the temperature to 140 C and cook for a further 10 to 20 minutes.
    9. 8. Wait 10 minutes before turning out of the cake tin.

    Turned out fluffy and moist. I added 1tsp of bicarbonate of soda, 4 small ripe bananas and cooked in 2 circular tins of approximately 8 inches diameter and 2 inches deep for 40 minutes at 160C.

    The  recipe turns out so fluffy but I need to add an egg as I found the batter was a bit stiff. I think this is due to the medium size of eggs and banana.

    I first made this cake almost two years ago when I had a Bellini, it was fantastic then and it is still fantastic now that I have tried it in my TM5 - this time I added choc chips and baked in a loaf pan.  Absolutely delicious!  Thanks for a great recipe

    Nice recipe. Only used half the amount of sugar and it was perfectly sweet with just that. Baked the cake in my Mackies bread tin and also added the zest of one organge (ala Barefoot Contessa's version) and some chopped up walnuts. Yummy.

     

    I also noticed the cake came away from the tin, as a few others have noted. Not sure why?
