Moist Banana Cake

Ingredients

  • 3 ripe bananas, Peeled
  • 150 g caster sugar
  • 150 g Butter, room temperature
  • 2 eggs
  • 240 g Self Raising Flour
  • 1/2 tsp bicarbonate of soda
  • 30 g Milk
  • 1 tsp vanilla essence

Recipe's preparation


    1. 1. Preheat oven to 160 C
    2. 2. Place bananas and vanilla essence in the bowl and mix for 5 seconds on speed 4. Set aside.
    3. 3. No need to rinse out bowl. Add butter and caster sugar and mix for 20 seconds on speed 5.
    4. 4. Add the eggs one at a time and combine each for a few seconds on 
    5.    speed 5.
    6. 5. Add the banana mixture and mix for 3 seconds on speed 5.
    7. 6. Add the flour, bicarbonate of soda and milk and mix for 15 seconds on speed 4 to 5.
    8. 7. Pour into a lined 20cm cake tin and bake in the oven for 1 hour. If cake still looks wet after this time reduce the temperature to 140 C and cook for a further 10 to 20 minutes.
    9. 8. Wait 10 minutes before turning out of the cake tin.

    Really nice, I reduced the sugar to 100g and it was still lovely and sweet. Topped with a simple lemon icing. Super easy! Might add a bit extra milk or oil next time to make it even more moist.

    Not a strong banana flavour so could probably add another if you wanted it stronger. Reduced sugar to 120grams. Kids loved it for supper with a milo & also perfect for lunchboxes.

    I'm so glad I found this recipe - it's the best banana cake I've ever made! I put the butterfly in while beating the butter and sugar, and whipped them at speed 4 30 secs. Then I kept it in when I added the eggs and flour. Light mixture, gorgeous flavour. I doubled the recipe and it all fitted into the TMX 31 bowl without a problem. It made one generous cake in my ring tin and 11 muffins.

    This is a great recipe - nice and moist cake and really light too. Also cut the sugar down to 100g as per the suggestions. It was great even without icing and Miss 5 enjoyed it in her school lunchbox. Will definitely be making this quick easy recipe again. Thank you.

    JASwain: Sorry I didn't see this comment until now. I just literally eyeball it... I put icing sugar into a bowl and then add lime juice little by little until it's all mixed in. If you add too much juice (can be either lemon or lime) it will be too runny and will run all over the cake, so you have to judge it just right. Always start with less as you can always put in but you can't take out!

    This is my go to recipe atleast once a fortnight for school snacks! I double the batch easily in my TM5 and then divide it in to muffin trays! Delicious with cream cheese frosting or coffee buttercream icing but moist enough without icing too!

    Most definately a moist cake - delicious! Nicest bananna cake recipe I have ever tried and so easy.

    I also halved the sugar and didn't miss it at all as the bananna's were ripe. I always have frozen banannas in the freezer for smoothies (buy them in bulk when cheap and getting over ripe) so this recipe will be pulled out again when having unexpected guests!

    I usually use these ingredients for my version but just hand mix. your recipe turned out absolutely perfectly and the texture was sooo much better than mine so i've printed yours out to keep on the fridge to be my new go-to.

    i substitued 100g of the sugar for xylitol

    Baking is my "thing"but have never found THE banana cake recipe because I have never really liked banana's. Sucked in by all the positive reviews I decided it was the perfect activity for my 2 toddlers on this rainy day. Well,what can I say? Such unassuming ingredients and yet an amazing result. Was so quick and easy to throw together and have found myself sneaking bake for seconds which is unheard of. Not to mention a massive hit with the boys. I made exactly as per the recipe and wouldn't change a thing but I did add a cream cheese icing (because hey if you are making a cake may as well go all out)also from this site by obii which I could also recommend as it was excellent
