Biscuit

  • 190 grams Butter
  • 1 teaspoon vanilla essence
  • 125 grams brown sugar
  • 1 --- egg
  • 150 grams Flour, Self Raising
  • 100 gram Flour, Plain
  • 1/2 teaspoon bicarb soda
  • 75 gram coconut, dessicated
  • Rasberry Jam

Cream Filling

  • 75 grams Butter
  • 1/2 tsp vanilla essence
  • 2 tsp Milk
  • 190 gram icing sugar

Recipe's preparation

    Biscuit
  1. Preheat oven to 180C.

    Place butter, vanilla amd sugar  in Bowl and cream, 30sec/ speed 4 .

    Add egg and beat to combine, 15sec/ speed 4

    Place flours, bicarb soda and coconut in Bowl and mix 15sec/ speed 4 *I actually placed a baking bowl on top of TMX Bowl and weighed in flours, bicarb soda and coconut and added to the TMX Bowl in three portions, mixing for each time 5 sec/ speed 4.

    On a prepared tray, roll two teaspoons of mixture into ovals, place on lined oven trays and flatten slightly with the back of a fork. Allow room for spreading.

    Bake for seven minutes to 10 minutes. Remove and cool on trays for a few minutes to cool completely

  3. Insert Butterfly. Beat butter, vanilla , milk and icing sugar, in Bowl 30 secs/speed 4 *I found I had high expectations on how this filling "should have looked" but after the assembly of the biscuits, this filling had set and wasnt as disappointing as I thought it would have been.

     

  4. Assembly of Biscuit
  5. Place a small amount of raspberry jam on the flat side of one biscuit and spread some icing on the flat side of a similar -sized biscuit.

    Sandwich biscuits together. Repeat with remaining biscuits. Store in an airtight container.

Tip

Great fun for the kids to help with - as long as you do use a spoon to get mixture out of the Bowl, and be careful of little fingers!

    These biscuits were great. The whole family enjoyed them. I will flatten a little more next time before cooking as I made jumbo biscuits once I put them together. Mind you the family didn't complain.

    Makes a good sized batch as well. Definately making again.

    Absolutely loved these, I used thermo made strawberry jam, my biscuits turned out huge so next time I will use a smaller amount and not flatten them so much. My biscuits were also quite pale looking like melting moments, they weren't brown like your picture.
