Ingredients

  • 150 g brown sugar
  • 220 g plain flour
  • 130 g dried cherries, chopped, (or could use cranberries)
  • 1 tsp salt
  • 100 g coconut oil
  • 60 g coconut flakes
  • 1/2 tsp baking powder
  • 1 tsp vanilla essence
  • 40 g pepitas
  • 2 eggs
  • 30 g ground linseeds
  • 200 g choc chips
  • 50 g rolled oats

Recipe's preparation

  1. Beat coconut oil and brown sugar on speed 5 for 1 minute. 

  2. Add butterfly, eggs and vanilla to the mixing bowl and combine on speed 4 for 1 minute then remove butterfly

  3. Ad flour, baking powder and salt, and mix 20 seconds speed 5

  4. Add all remaining ingredients and mix on reverse for 10 seconds speed 5.  Refrigerate for 1 hour until firm

  5. Preheat oven to 180 degrees C & line baking trays with baking paper

  6. Roll tablespoons of mixture into balls, place on trays ~2 inches apart and flatten slightly.  Bake 15 minutes, then place on wire racks to cool completely.

    Tasty!

    Halfed the sugar and used dried mango, pawpaw and apple instead of cherries. 

    Next time.will use less chocolate too
