Museli Bars gluten free/ dairy free/ nut free/ refined sugar free

Ingredients

24 portion(s)

museli mix

  • 3 1/2 heaped tablespoons coconut oil
  • 4 heaped tablespoons honey
  • 1 level teaspoon vanilla
  • 20 grams Brown rice puffs
  • 50 grams mixed sunflower and pepita seeds
  • 40 grams desicated coconut
  • 1 level tablespoon sesame seeds whole
  • 80 grams sultanas or finely chopped dried apricots
  • 70 grams gluten free rolled oats

Recipe's preparation

    Museli Mix
  1. Melt Coconut Oil, Honey and Vanilla on 100/speed 2 for 2 mins.

    Add Brown Rice Puffs, Oats, Coconut, Sultanas and Seeds, mix gently on reverse speed 2 for 15 seconds or until wet combined with dry mix.

    Press tablespoons of mixture into a silicon mini muffin baking tray.

    Press mixture down firmly with the back of a spoon.

    Should make 24.

    Bake in preheated oven 170 for approx 8-10 mins until lightly golden. These are best kept chilled in the fridge.

    This is fabulous I made it as a museli bar slice so needed cooking for a bit longer. I changed the ingredients a bit and added chia seeds, rice bubbles and some left over boring Amaranth and Millet cereal. This is a great recipe as you can change it around for different tastes. Thank you

    kathysaks you could try quinoa flakes, I use them in anzac biscuits instead of oats. A friend bought the gluten free oats once (from the health food section of woolworths or coles) and I think they were rice flakes.

    Just made these, they taste delicious. I didn't have brown puffed rice, so used rice pops and didn't have sunflower seeds so used sliced almonds, used a combo of sultanas and dried apricots, turned out perfect, love them, thank you for sharing this recipe tmrc_emoticons.)

    Delicious! The coconut oil and honey combination work well to keep the bar together rather than melting in the heat (I made these last week during 40 degree weather. Husband forgot his and left it in the car all day. Was still together fine when we found it.) I swapped in some goji berries and chia seeds as well. Tasty!
