Ingredients
Irish Apple Cake
- 225 grams unsalted butter, (Or margarine)
- 175 grams Jaggery or sweetener of choice
- 2 eggs
- 125 grams sultanas or currants
- pinch Nutmeg or Mace
- pinch salt
- 350 grams S.R. Flour
- 450 grams apples, (Cooking or eating variety)

Preheat oven to 150c/300f - Grease & Line 20cm/8" tin
Add butter and sugar to"Closed lid" and mix 30 seconds speed 4
Add eggs one at a time and mix for 20 seconds speed 4
Add sultanas, spices and flour, mix for 20 seconds speed 4
Peel, core and slice apples (not too thinly)
Place a third of the of the mixture into prepared tin and top this with half the apples
Top that with another third of the cake mix
Top that with the remaining apples
Top that with the remaining third of the cake mixture
Bake for 90-120 minutes. Time depends on the moisture content of your apples so test from time to time with a skewer, cake is done when skewer comes out clean.
Allow to cool completely (if you can wait)! Before plating.
Optional: dust with icing sugar to serve
Optional: For a healthier(ish) version replace butter with plain thick yoghurt
Tip
Please note the mixture will be very dry and stiff but please don't be tempted to add any extra liquid! The moisture (and flavour) comes from the apples in the baking
Will be a bit crumbly if you try to slice when still warm, so wait until its completely cool....if you can resist that long

Lovely cake, looks really nice with the apple layers. A little too crumbly for the lunchbox but a nice dessert cake.

This cake is simple and delicious... I took it to our family's Easter lunch and everyone loved it. I used natural greek yoghurt instead of butter and it worked perfectly. I used a slightly larger tin (about 22cm) so I made an extra 1/2 quantity of mixture to create the last layer. Would also be delicious served with custard from the EDC. Thanks for sharing, I'll definitely be making this again.
