Oat Cranberry Chocolate Chip Cookies
- 112 grams unsalted butter
- 112 grams brown sugar
- 56 grams white sugar
- 1 egg
- 1 tsp Vanilla Paste
- 112 grams plain flour
- 140 grams rolled oats
- 1/2 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 126 grams dried cranberries
- 126 grams dark chocolate chips

- Preheat oven 180 degrees and line baking trays.
- Place butter, brown sugar, white sugar, egg and vanilla in mixing bowl then mix 2min/speed 3.
- Add flour, oats, baking powder, bicarbonate of soda, cinnamon, salt, dried cranberries and chocolate chips. 15 sec/"Dough mode" . Mix longer if needed.
- For a thicker cookie, with a soft centre, place dough in the fridge to chill. For a thinner cookie, skip this step.
- Scoop the dough into 1.5" balls and place on a tray 2" apart. Bake the cookies for 7-9 mins, depending in the dough is chilled or not.

TO FREEZE DOUGH FOR LATER USE: Portion dough on a tray and freeze, then place in freezer bags. Preheat oven and place cookies directly from the freezer onto a tray. Adjust cooking time.
