Orange and Poppy Seed Friands (Gluten Free)

Ingredients

12 piece(s)

  • 125 grams Gluten free plain flour
  • 1/2 teaspoon Gluten Free Baking Powder
  • 180 grams raw sugar
  • 100 grams almonds
  • 1 orange zest
  • 110 grams Butter
  • 3 eggs
  • 30 grams poppy seeds
  • 2 tablespoons orange juice

Recipe's preparation

  1. Pre heat fan forced oven to 180deg, spray a 12 hole friand tin with light oil spray

  2. Place almonds and sugar into TM bowl & blitz on sp 10 for 10-15 seconds until fine, set aside.

  3. Place orange zest in TM bowl & blitz on sp 8-9 for 5-10 seconds, set aside (but don't be too fussy if some stays in the bowl)

  4. Place butter in TM bowl, melt on 100deg, for 1 min on sp1.

  5. Add all ingredients (including almond/sugar mixture) back into TM bowl & combine on sp 4 for 30 seconds.

  6. Spoon into a lightly greased friand tin, filling two thirds full.

  7. Bake for 15-20 mins, checking after 15 minutes, until a skewer inserted into the centre comes out clean.

  8. Cool in the tin for 5 minutes before carefully loosening the sides of the friands with a flat blade and lift out to cool on rack.

    Loved these and so easy! I used normal plain flour and baking powder, halved the sugar, used almond meal instead of almonds ( didn't have any). I would double the recepe next time as I found it only made 6 decent sized friands.

    You could also use coconut oil to substitute butter. I did it in a chocolate cake the other week & it turned out even better. Dense, fluffy and moist. YUM! The coconut flavour isn't too over powering, so would be fine in this recipe I would imagine.

    These were very dense (which friands usually are).  My little boy didn't like them much but he's picky and I didn't mind, there was more for me! I didn't have any poppy seeds so put in chia seeds instead, worked fine.  Thanks for a great recipe.
