Biscuit Dough
- 100 g Butter, Room temperature
- 175 g caster sugar
- 1 egg, Room temperature
- 170 g SR flour
- 100 g plain flour
- 1 tsp Bi Carb Soda
- 1 tsp cream of tartar
- 1/4 tsp salt
Rolling Mixture
- 20 g sugar
- 2 tsp cinnamon

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- 1. Insert butterfly- Add butter & sugar and cream 2 min Sp 3.
2. Scrape down bowl & cream again 2 min Sp 3 until light & fluffy.
3. Remove butterfly-Scrape down bowl & add the egg. Combine 12 sec Sp 4
4. Scrape down bowl & add both types of flour, Bi Carb, Cream of tartar & salt, mix 30 sec Sp 4
5. Preheat oven fanforced 150 degrees & line 2 baking trays with baking paper
6. Combine rolling mixture into a bowl
7. Empty bowl onto Thermomat & knead crumbly dough into a smooth ball.
8. Roll dough into heaped teaspoon sized balls & roll into cinnamon & sugar mixture & place onto baking tray allowing room to spread.
9. Use a fork to squash the balls 2 thirds the way down.
10. Bake for 10 to 12 mins until a very light golden (especially if you like the chewy centre). Cool for 5 mins on the tray before transferring to a cooling rack. (although they are SO yummy eaten hot)
