- 170 grams raw almonds
- 120 grams Raw Pecans
- 40 grams Coconut Flour
- 3/4 teaspoon baking powder
- 1/2 teaspoon salt
- 25 grams coconut palm sugar
- 50 grams coconut oil, melted and cooled
- 2 eggs, room temperature
- 80 grams honey, softened
- 2 teaspoons Pure Vanilla Extract
- 30 grams Raw Pumpkin Seeds
- 80 grams Raw Coconut Flakes

Recipe's preparation
1 Preheat your oven to 175C degrees. Line a baking tray with baking paper and set aside.
2 Place Pecans into TM Bowl and Pulse on Turbo for 1-2 seconds or until roughly chopped. Set aside.
3 Place Almonds into TM Bowl and mill 5-10 seconds, Speed 7. Add Coconut Flour, Baking Soda, Salt and Sugar to the bowl, and mix Reverse, Speed 4 until combined.
3 Add the melted Coconut Oil, Eggs, Honey and Vanilla to the TM Bowl and mix Reverse, Speed 4 until combined well.
4 Add the Pecans, Pumpkin Seeds and Coconut Flakes and mix on Reverse, Speed 4 until they are evenly distributed through the dough.
5 Roll 1-2 tablespoons of the dough for each cookie into balls and place on the tray about 1 inch apart. With wet fingers, push the balls of dough down into round disks.
6 Bake in the centre of the preheated oven until pale golden brown all over, and browned on the edges (about 15 minutes).
7 Remove from the oven and allow to sit for around 5 minutes before transferring onto a wire rack to cool completely.
8 Store in an airtight container in the fridge.

My favourite healthy cookie/baked snack. I don't have coconut oil so I used rice bran oil instead. I also threw in a tablespoon of both chia seeds and flaxseeds in the mix. Yum yumm!!

Thanks for sharing this recipe. These cookies are really delicious, my entire family loved them. I did not have any honey so I used rice malt syrup instead. Next time I will try honey. The next time will need to be soon as they are vanishing from the plate as I type!
