These are so amazing! I have been making these the past few weekends for snacks during the week. They keep really well in a container in the fridge. I substitute dried cranberries for the sultanas. Yum! Thank you

    Super yummy!

I made these the other day for our work snacks and they turned out lovely. I swapped out the sultanas with dates (after grinding the almonds put them in with the carrots), also didn't have honey so used rice malt syrup and the last of my agave. So delicious, I love that this recipe works well even with a few swaps. Husband loved em! As I didn't fill my muffin cups all the way, I managed to get 16 muffins, perfect snack sized portiontmrc_emoticons.)

  • Hi, when using coconut flour

Hi, when using coconut flour I have read that you need to add a lot more eggs to account for it being so much drier.

I'm sure these are lovely. I made an unsuccessful attempt to substitute coconut flour for almond meal (due to allergies & unfortunately couldn't resurrect the too-dry mixture that resulted. Perhaps a more skilled cook could have made it work.

  • Wow! I really didn't expect

    Submitted by sevenhuysens on 9. May 2014 - 14:48.

Wow! I really didn't expect these to be so yummy - you have totally surprised me! I added half a zucchini as I only had 3 small carrots and used coconut oil instead of macadamia oil. I don't like sultanas so added some  shredded coconut instead.

    Thank you for sharing!
