Paleo Coconut Cupcake

Ingredients

Cupcake mix

  • 40 g Coconut Flour
  • 20 g tapioca flour
  • 1/2 teaspoon baking powder
  • pinch Himalayan salt
  • 2 eggs
  • 50 g Rice malt syrup
  • 60 g coconut oil
  • 80 g coconut milk
  • 1 teaspoon vanilla extract

Coconut Icing

  • 90 g coconut oil
  • 2 tablespoons Rice malt syrup
  • 2 tablespoons coconut milk
  • 1 tablespoon Coconut Flour
  • 1 tablespoon lemon juice

Topping

  • 2 tablespoons Desiccated Coconut

Recipe's preparation

    Cupcake mix
  1. Preheat oven to 180 degrees C

    Place dry ingredients in mixing bowl and mix for 10 seconds sp5 - put aside

    Add coconut oil to mixing bowl and melt 37 degrees 2 minutes sp1

    Add all ingredients to mixing bowl and mix 1 minutes sp5

    Line 6 x patty pans with patty papers (spray inside with cooking spray to prevent sticking)

    Divide mixture between 6 patty pans.

    Bake in oven for approx 20 minutes until cooked through

    Allow to cool

    Top with Coconut Icing and desiccated coconut

  3. Add all ingredients to mixing bowl and mix 1 minutes sp5 scrapping down sides until smooth

    Keep icing in fridge otherwise it will go to soft
