Paleo Custard Tart (refined sugar/dairy/grain free)

Pastry

  • 120 g blanched almond meal
  • 60 g Coconut Flour
  • 60 g coconut oil
  • 2 tbsp chia flour, (not required, added for nutrition)
  • 1 large egg
  • 50 g Raw Honey
  • 2 tsp vanilla extract
  • 1 tsp baking soda
  • pinch salt
  • pinch Nutmeg

Custard

  • 400 ml coconut milk, 1 tin
  • 5 large fresh eggs
  • 2 tbsp Raw Honey, (or more to taste)
  • 1 tsp vanilla extract
  • pinch salt
  • pinch nutmeg for garnish

Recipe's preparation

  1. Preheat oven to 180 degrees.

     

    Add the dry ingredients for the pastry to the TMX bowl. Combine on speed 5 for 3 seconds.

     

    Add the rest of the ingredients for the pastry to the TMX bowl. Mix on speed 4, 15 seconds until dough comes together.

     

    Press dough in to your pie tins (or tin) and brush the top edges of the pie with water. **you are not able to roll this dough out**

     

    Cover dough with baking paper and pie weights/beansrice and blind bake in the oven for 7 minutes. 

     

    While the pastry is baking in the oven prepare the custard.

     

    Add all custard ingredients to the TMX bowl. Blend on speed 5 for 20 seconds.

     

    Once pastry is done blind baking, remove from oven and carefully fill the pastry with custard mixture. Sprinkle with nutmeg.

     

    Bake in oven for 25-30 minutes or until there is a slight wobble to the mixture in the centre. 

     

    Allow to cool completely before refrigerating. Tastes better the next day cold tmrc_emoticons.)

Tip

This is best eaten cold from the fridge, rather than warm from the oven.
