Peach Kuchen

  • 3 peaches, ripe but firm, Freestone best
  • 300 g wholemeal plain flour
  • 2 level tsp baking powder
  • pinch salt
  • 100 g sugar
  • 30 g Coconut
  • 125 g Butter, chilled and roughly chopped
  • 50 g caster sugar
  • 2 tsp cinnamon
  • 375 g sour cream
  • 1 egg

    Preparation
  1. Preheat oven to 180 degrees celsius.

  2. Method


    PEACHES: Bring 1000g water to boil in bowl. Set Varoma in place. Cut peaches in half and remove the stones. Place cut side up in Varoma Dish. Steam peaches 12-15mns/Varoma/speed 1. They need to be par cooked and still firm with the skin ready to slide off. Set dish on tray, slip the skins off and slice each half into 5 slices.


    BASE: Place flour, baking powder, salt, sugar, coconut and butter into clean, dry mixing bowl and mix 10 sec/speed 6.* It will now resemble fine breadcrumbs. Tip into ungreased** baking tray, 23x33x5cm (or near equivqalent). Press in firmly. Bake 10 min. 180 degrees C. Remove from oven and arrange peach slices in 3x10 rows.


    TOPPING: Mix caster sugar and cinnamon together 2sec/speed4.* Sprinkle over peach slices. Mix sour cream and egg 5sec/speed4. Carefully pour over base around and between peaches. Return to oven and bake approx 25 minutes. Do not overbake. The peaches will have a lovely golden glaze from the sugar and the custard should be lightly coloured, set but not dry. Cut into slices and serve warm or cold with cream, icecream or runny custard.


    *No need to rinse or wash bowl between these steps
    **There is enough butter in base so greasing is unnecessary.
