Cookies

  • 125 grams soft butter
  • 150 grams brown sugar
  • 135 grams golden syrup or molasses
  • 1 egg
  • 1/2 teaspoon ground all spice
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground pepper, black or white
  • 1/2 teaspoon baking powder
  • 1 pinch ground cloves
  • 1 pinch salt
  • 11/2 teaspoon ground cinnamon
  • 380 grams plain or bakers flour

  • 150 grams pure icing sugar
  • 11/2 tablespoons water
  • pinch cinnamon
  • pinch all spice

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Dough
  1. Add butter and sugar to TM bowl Closed lid and mix 40 sec / speen 4. scrape sides

    Add golden syrup/molasses and mix 30 sec / speep 4

    add egg thru lid hole while blades are turning speed 3 and mix for 30 sec. scrape sides and mix for 20 sec / speed 4

    add spices, flour, salt and pepper and mix 15 sec / speed 6 then knead Dough mode for 2 minutes. dough will be wet/sticky

    Turn out onto well floured thermomat and shape into a ball, wrap in cling wrap and place in the fridge for at least an hour

     

  2. take out of fridge and rest while the oven preheats to 180'C and line 2 trays with baking paper

    divide the dough into 2 and roll out into 1 inch logs

     

  3. Cut into 1 inch pieces and roll into balls and place onto baking tray pressing slightly and bake for 15 minutes

  4. Allow to cool on the tray - they will be soft when first removed from oven - then transfer to cooling rack

  5. Icing
  6. place cooling rack over baking paper

    Mix icing and "spoon over each biscuit and let run down the sides.

    Allow to set before placing into an air tight container

    I made a batch of these to give to neighours for chirstmas - it was a huge hit and I have been asked for more every year from now on. I didn't worry about the icing however as they are lovely with a cuppa just as they are.

    Delicious.  My Austrian father in law ate 6 in a row!  I made the icing with lime juice (no spices) and completely coated the biscuit.  Very yummy with the peppery flavour of the biscuit.  Thank you!
