  • 230 grams almonds
  • 100 grams Raw Sugar or Rapidura
  • 225 grams Butter
  • 3 Eggs, Large
  • 70 grams honey
  • 2 lemons
  • 110 grams Polenta flour
  • 1/2 tsp Baking Power
  • Pinch salt
  • 1 tsp vanilla extract

Recipe's preparation

  1. Mill almonds 10secs/speed 9. (Set side)

    2. Add sugar and zest of two lemons and mill 10secs/speed 9. Scrape down sides and mill again if needed.

    3. Add butter and mix 30secs/speed 5. 

    4. Add eggs one at a time on speed 3 through the lid.

    5. Add ground almonds, juice of half a lemon, honey, polenta, baking powder, vanilla, a pinch of salt and mix 20 secs/speed 5.

    6. Bake for 45mins or until centre is springy at 160c.

Fine polenta should work well too.
