Polish Brioche and Fruit Crumble Slice

Ingredients

Crumble Mixture

  • 300 g plain or bakers flour
  • 150 g sugar
  • 100 Butter, Sofened
  • 1 egg
  • 10 g baking flour
  • Pinch of Salt, to taste

Brioche Mixture

  • 230 g Milk
  • 2 sachets Yeast (4tsp)
  • 3 eggs
  • 1/2 tsp salt
  • 120 g sugar
  • 60 g Butter
  • 500 g plain or bakers flour
  • 10 g oil

Recipe's preparation

  1. Preheat oven to 160ºC.

    Place all ingredients in the bowl and mix to combine for 8 Seconds on speed 6.

    Then knead for 3 minutes on Interval Speed. Remove and place covered in a bowl for 30 to 40 minutes to almost double in size.

     

    Grease rectangular large biscuit or slice tray and roll or push dough evenly with your hands to fill tray. Place your favourite fruit on the top i.e. blueberries, stewed apples, peaches, plums or jam, sprinkle with crumble mixture.

    Bake for 30 to 40 minutes until golden brown.

    Crumble Method;

    Place flour, baking powder and salt into bowl and mix for 10 seconds on speed 6.

     

    Add remaining crumble ingredients and mix for 10 seconds on speed 6.

    Set aside.

    Made this for Easter as the family is sick of hot cross buns... yes that's right.. apparently you can have too many hot cross buns.   This was a massive hit and I ended up putting it into two trays after Adrianne mentioned it too a long time to bake.  This cooked in about 35minutes.  Will definately make again.

    I think the cooking time will vary greatly depending on your oven, the size of your tray and also of course the fruit could have had an impact!

    How long did it end up taking? And did you use fan forced?

    Delicious recipe but a few tips....... The baking time is quite a lot longer than specified. From the beginning to end the time was more like 2 hours than 1. The crumble quantity was huge. I only needed to use half. I made mine with fresh apricot halves and frozen raspberries. This was delicious served with a cup of tea and the vanilla custard from the EDC cookbook.

    I will make again.
