- 300 grams Pumpkin, chopped
- 1 tablespoon Butter
- 65 grams Coconut sugar
- 1/2 teaspoon salt
- 400 grams Self Raising Flour
- 1 egg

Recipe's preparation
Place pumpkin in TM and grate 10sec/speed 6.
Scrape down sides and cook 10min/ 100deg/ speed 2
Transfer pumpkin to another bowl to be added later.
Add butter, coconut sugar,salt, flour and egg into TM bowl and mix 10 sec/ speed 4.
Add pumpkin and mix 10sec/ speed 4.
Empty dough out onto a lightly floured surface and roll out until dough is about 2cm thick.
Cut with a scone cutter and place on lightly greased baking tray.
Bake in 180C oven until golden brown (approx 15 mins)
Best eaten when warm.

Tip
Coconut sugar is available from most health food stores. You can use other sugars if you prefer.

doubled recipe, very moist,just had to add more flour. Used knead function for about 1 min because I had so much mixture in bowl. Made 18 large scones. Delicious!

Some of the pumpkin burnt to the bottom of the bowl and took a lot of scrubbing to get off, before I could continue on to the next step.
If I make these again, I'd suggest adding a small amount of water, to stop this from happening.

I would like to make these gluten free.... do you think if I just substitute flour for gluten free flour this would be ok..... I know gluten free flour can sometimes dry out recipies more!

Was really great, was concerned at first as there wasn't any water added to the pumpkin but it was great, the mositure in the pumpkin cooked it. I also used normal sugar as I didnt have coconut sugar. Beautiful Pumpkin scones!! Thank you for sharing your recipe.
