Pumpkin Walnut & Raisin Muffins

  • 250 g SR flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 level teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 450 g pumpkin, puree
  • 80 g Butter, melted
  • 120 g Milk
  • 100 g brown sugar
  • 50 g raw sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 50 g walnuts, halved
  • 50 g raisins

Recipe's preparation

  1. Place butter into Closed lid and melt for 3 mins at 80 until completely melted, set aside

  2. Place eggs into Closed lid and beat for 10 secs on speed 2

  3. Add puree pumpkin, melted butter, milk, sugars and vanilla into Closed lid mix for 20 secs speed 4

  4. Add remaining ingredients except walnuts and raisins and mix for 20 secs speed 4 (don't over mix)

  5. Add walnuts and raisins and mix 10 secs Counter-clockwise operation  speed 4

  6. Line 12 cup muffin tin with paper liners and fill with batter to approximately 3/4 full  and cook 200 C for approximately 40 mins

    This sounds lovely but I am unsure if you mean cooked or uncooked pumpkin puree. Could you please clarify this for me?
