  • 150 grams Butter
  • 140 grams raw sugar
  • 280 grams almonds
  • 3 eggs
  • 110 grams plain flour
  • 1 tsp baking powder
  • 2 punnets raspberries

Recipe's preparation

  1. Preheat oven to 180'.  Grease & line with baking paper a 26 x 17cm slice pan.

    Mill almonds 10-20 seconds on speed 7  & set aside

    Mill sugar 20 seconds on speed 8.  Add butter & mix 40 seconds speed 6.  Keep the blades moving on speed 4  & add eggs one at a time until just combined - about 30 seconds

    Pour into prepared pan, Arrange raspberries over the top of the batter, pressing down lightly.

    Sift some icing sugar over the top . Bake for 40-50 minutes or until golden & firm.

    Cooln tin , dust with icing sugar & serve with whipped cream.

    I added the flour, almonds and baking powder with  the eggs...and 90g rapadura sugar instead which was just sweet enough ...next time I would mix the raspberries through the cake thpugh. Tasty and healthy for kids with all the almonds in it
