Raspberry Friands

Ingredients

  • 30 g almonds
  • 125 g Butter
  • 100 g sugar
  • 75 g self-raising flour
  • 45 g coconut
  • 4 egg whites
  • 100 g raspberries, (fresh or frozen)
  • 6

Recipe's preparation

  1. Place almonds into TM bowl (if you are
    using raw sugar, add to bowl also).  Grind on speed 10 for 10 seconds. 
    Remove from bowl and set aside.


    Place butter into TM bowl.  Melt on 80 degrees, speed 2 for 1 minute.

    Add almonds, sugar, flour, coconut and egg whites to bowl.  Combine for 30 seconds on interval speed.

    Spoon mixture into greased friand (or muffin) tins.  Press raspberries into the top of each friand.

    Bake in 200 degree celsius oven for about 15 minutes or until cooked through.

    I had leftover egg whites from making lemon crumble slice, twice, so I doubled the recipe, used the rose gold muffin tin, and poked frozen cherries instead of raspberries.

    Lovely flavour. not too sweet. Only thing is I was not sure opf the interval setting...is that the dough setting? I think I over mixed and they came out a little rubbery. Trying again this time using the dough setting.

    These are sooo good and easy. I used mimi loaf pan and got 6 friands, cooked on 200 for 18 minutes. Reduced sugar to 70 grams and cocunut to 30 grams (will increase almoned meal and remove coconut next time) and added 60 grams if white chocolate buttons. Beautiful, thank you

    Super quick and easy. Made with 160 gm egg whites. Used GF flour. Cooked in mini loaf tins and required an extra 5 mins. Used frozen mixed berries.

    Fantastic as is - or adding lemon rind (Per previous comment). I've also substituted the coconut for white chocolate!

    Excellent. Thanks. i followed earlier suggestions and added a lemon rind to the sugar, almond blitz. Also used fresh older strawberries that were left over, instead of raspberries,  baked in mini muffin trays Superb and easy.

     

    and again, April 2016, Still fantastic.  

    note to self ....1 tray mini muffins & 1 tray 'Nan's' 'flat muffins'.

    My first attemp at friands. I will have to invest in a pan! I made them in cupcake pans. A little on the buttery side. I reduced the sugar to 45 Gm and top them with frozen cherries. Thanks for sharing the recipe. They are easy and delicious.

    I replaced the almonds with brown rice so they are lunch box safe.  Freeze really well, so far family hasn't noticed.  Take out of the freezer every day and making second batch today.

  • First time ever making

    First time ever making friands and they were absolutely delicions. I added the zest of 1 lemon and ground it up with the almonds. I used reduced fat butter and swapped out a third of the sugar for Natvia (granulated stevia). Then at the end before baking I pressed a whole raspberry into the centre of the friand (about 3/4 down so only 1/4 of raspberry poking out of the batter) and lightly placed a few flaked almonds onto the batter around it. Baked it in a muffin tin because I don't have a friand tin and they turned out perfectly. Will defnitely make again, might use orange zest and blueberries next time just to try something different.
