Raspberry, White Chocolate and Macadamia Bread

Raspberry Bread

  • 60 g Macadamia nuts, raw, unsalted
  • 60 g white chocolate
  • 60 g raw sugar
  • 10 g vanilla extract
  • 200 g Milk
  • 2 eggs
  • 200 g Self Raising Flour
  • 100 g frozen raspberries

Recipe's preparation

    Raspberry Loaf / Bread
  1. Preheat oven to 170 degrees, line a loaf tin with baking paper.


     


    Place macadamias and chocolate into Thermomix jug and grate for 1 second / Closed lid / turbo. You want some chunks of chcolate and macadamias as well as some finely grated. 


     


    Set aside


     


    Place sugar into jug and mill for 3 seconds / speed 9. Add vanilla and milk then mix for 3 seconds / speed 3. 


     


    Add flour, raspberries and nut mixture and mix for 5 seconds / counter-clockwise operation / speed 3.


     


    Pour mix into tin and bake for about 40 minutes, until the top is very brown. Allow to cool the slice and toast under the grill or slather wiht butter and serve.

    This bread was delicious. I added the eggs with the milk and vanilla. Also used macadamias from our neighbour’s tree. Yum!

    I made this and loved it.  Because I was following the instructions I totally missed the eggs that are listed in the ingredients list but it still worked fine. Will definitely make again.
