Rich Jaffa Cake with white chocolate frosting

Cake

  • 100 grams dark chocolate, in pieces
  • Zest 1/2 orange
  • 180 grams sugar (raw or white)
  • 180 grams unsalted butter, cubed and at room temperature
  • 3 eggs
  • 1 tsp vanilila extract
  • 50 grams cocoa
  • 180 grams plain flour
  • 3 tsp baking powder

Frosting

  • 30 grams sugar (raw or white)
  • 200 grams white chocolate, in pieces
  • 250 grams cream cheese, cubed and at room temperature

Recipe's preparation

    Cake
  1. Line and grease a 23 cm springform pan. Preheat oven to 180'C.

  2. Grind the chocolate at speed 8 for 5 seconds. Set aside.

  3. Put the orange zest and sugar in the jug, grind at speed 9 for 10 seconds.

  4. Add the butter to the jug and mix on speed 5 for 1 minute.

  5. Add the eggs, one at a time, through the opening in the lid and mix at speed 5 for approximately 15 seconds.

  6. Add the vanilla, cocoa, flour, baking powder and chocolate. Mix at speed 5 for 20 seconds.

  7. Pour the cake mixture into the tin.

  8. Bake at 180'C for 45-55 minutes, or until a skewer comes out clean.

  9. Allow to cool before frosting.

  11. Grind the sugar at speed 9 for 10 seconds. Set aside.

  12. Add the chocolate and grate for 5 seconds at speed 8. Melt for 2 minutes at 50'C on speed 3.

  13. Add the cream cheese and sugar and beat for 1 minutes on speed 5.

  14. Spread over the top and along the sides of the cooled cake.

Tip

It's not quite a mud cake but is moist and has a good chocolate flavour. This cake will keep for a few days and is best made the day before you need it. Cuts well into 16 pieces.

For a rich chocolate cake, leave out the orange and add 1 tsp instant coffee with the flour.

This amount of frosting will cover the top and sides of 1 cake. Double the amount of frosting if you want to split the cake and make a layer cake.

The chocolate sprinkles decorating the cake in the photo are a Dutch chocolate sprinkle that are available through delicatessans. They come in milk or dark chocolate varieties and are very useful for decorating cakes.

    I made this cake today. It was nice - I think I left it in the oven a bit long, it was a little dry and crumbly. Will monitor it a bit closer next time! The icing is yummy.

    Party made this for a bday cake, very yummy. We didn't get 16 slices out of it and had frosting left over, but tasted great and was nice and simple to make  tmrc_emoticons.;)
